Ingredients

  • 16 pieces Medjool Dates pitted
  • 8 strips Bacon thick-cut, sliced in half or thirds
  • 8 pieces Almonds or Cheese optional for stuffing
  • 1 tsp Brown Sugar or Honey optional for caramelization
  • pinch Black Pepper or Chili Flakes optional for spice

Equipment

  • Baking sheet
  • Cooling rack
  • Toothpicks
  • Sharp Knife
  • Parchment Paper
  • Tongs

Method

  1. Preheat the oven to 200°C (390°F) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare your dates by making a small slit in each and stuffing with an almond or piece of cheese, if desired. This adds a delightful surprise inside.
  3. Cut each bacon strip in half or thirds, depending on the size of your dates, to ensure they wrap snugly around each one.
  4. Wrap each date with a piece of bacon, tucking the ends underneath or securing with a toothpick to hold everything in place.
  5. Place the bacon-wrapped dates seam-side down on the prepared baking sheet, spacing them evenly apart for even cooking.
  6. Bake for about 20-25 minutes, or until the bacon is deep golden and crispy, listening for sizzling sounds as it crisps up.
  7. Halfway through, use tongs to turn the tray or flip the dates gently for even browning and crispiness.
  8. Remove from the oven and let the bacon-wrapped dates rest for 5 minutes. The bacon will firm up, and flavors will meld slightly.
  9. Carefully remove the toothpicks and transfer the dates to a serving plate. Drizzle with honey or sprinkle with black pepper for extra flavor, if desired.
  10. Serve the dates warm to enjoy the crispy bacon and tender, sweet interior, perfect as a savory-sweet appetizer.

Notes

For extra flavor, sprinkle with a little brown sugar before baking, or add a dash of chili flakes for heat. These are best enjoyed fresh while the bacon is crispy and the filling is warm.
