  • 1 inch fresh ginger sliced thin
  • 2 carrots peeled and chopped
  • 2 stalks celery chopped
  • 1 medium onion diced
  • 4 cups chicken broth low-sodium preferred
  • 1 tablespoon fish sauce adjust to taste
  • 2 cloves garlic minced

Method
 

  1. Chop carrots, celery, and onion into small, even pieces to ensure quick and uniform cooking.
  2. In a large heavy-bottomed pot, heat a splash of oil over medium heat. Add the diced onion and cook until it turns translucent and begins to smell sweet, about 5 minutes.
  3. Add the diced chicken to the pot and cook until lightly browned on all sides, about 7 minutes, stirring occasionally.
