  • 1 pound large shrimp peeled and deveined
  • 2 tbsp Cajun seasoning store-bought or homemade
  • 1 tsp smoked paprika optional, for extra smoky depth
  • 1/2 tsp cayenne pepper adjust to spice preference
  • 1 clove garlic minced
  • 2 tbsp olive oil extra virgin preferred
  • 1/2 lemon lemon for fresh lemon juice
  • 2 green onions green onions chopped for garnish

Method
 

  1. Pat the shrimp dry with paper towels to ensure they sear properly and don’t sputter when hitting the hot oil.
  2. In a small bowl, combine the Cajun seasoning, smoked paprika, cayenne, and a pinch of salt if desired to create an even spice blend.
  3. Heat the skillet over medium-high heat until it’s shimmering and just begins to smoke. Add the olive oil, swirling to coat the bottom evenly.
  4. Add the shrimp in a single layer to the hot skillet. Sear for about 2 minutes, listening for a sizzle and watching for a pink color to develop.
  5. Flip the shrimp with tongs and cook for another 1-2 minutes until they are opaque, slightly charred at the edges, and firm to the touch.
  6. Sprinkle the spice mixture evenly over the shrimp during the last minute of cooking, tossing gently to coat each piece well.
  7. Add the minced garlic to the pan and cook for 30 seconds, stirring gently until fragrant.
  8. Squeeze the juice of half a lemon over the shrimp and toss gently to brighten the flavors.
  9. Remove the skillet from heat and sprinkle chopped green onions over the top for a fresh, savory finish.
  10. Serve immediately, garnished with additional lemon wedges if desired, for a juicy, smoky, spicy dish.
