Method
 

  1. Cut the avocados in half, remove the pits, and scoop the flesh into your blender.

  3. Pause to taste the pudding, then add more honey or vanilla if you prefer a sweeter flavor. If the pudding feels too thick, add a little more coconut milk and blend again until you reach your desired consistency.
  4. Pour the smooth pudding into individual serving bowls and cover them with plastic wrap or a lid. Place in the fridge and chill for at least 30 minutes, allowing the flavors to meld and the pudding to firm up slightly.
  5. Just before serving, sprinkle the pudding with toasted coconut, fresh berries, or a dusting of lemon zest for a colorful and flavorful contrast. The pudding should be velvety, with a slight sheen on top and a luscious, spoonable texture.
