Method
- Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
- Slice the fresh figs into thin rounds about ¼ inch thick, then set aside.
- Unfold the puff pastry sheet on a lightly floured surface and cut into 2-inch squares using a sharp knife.
- Place each pastry square onto the prepared baking sheet, spacing them evenly.
- Top each pastry square with a small piece of brie cheese, pressing it gently into the center.
- Add a slice of fig on top of the cheese in each square, then dollop with a tiny amount of honey.
- Brush the edges of each pastry with the beaten egg to give a shiny, golden finish.
- Bake the bites in the preheated oven for 12-15 minutes until they are puffed up and golden brown.
- Remove from the oven and transfer to a cooling rack. Sprinkle with sea salt flakes and chopped thyme, if using.
- Serve these warm or at room temperature, drizzled with a little more honey if desired.
Notes
For an extra touch, you can add a few fresh thyme leaves before baking or sprinkle with crushed pistachios for added crunch.
