Ingredients
  

  • 1 package puff pastry thawed if frozen
  • 1 wheel brie cheese cut into small pieces
  • 4 fresh figs sliced into thin rounds
  • 2 tbsp honey for drizzling
  • 1 tsp fresh thyme optional, chopped
  • 1 egg egg beaten for egg wash
  • a pinch sea salt flakes for sprinkling on top

Method
 

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. Slice the fresh figs into thin rounds about ¼ inch thick, then set aside.
  3. Unfold the puff pastry sheet on a lightly floured surface and cut into 2-inch squares using a sharp knife.
  4. Place each pastry square onto the prepared baking sheet, spacing them evenly.
  5. Top each pastry square with a small piece of brie cheese, pressing it gently into the center.
  6. Add a slice of fig on top of the cheese in each square, then dollop with a tiny amount of honey.
  7. Brush the edges of each pastry with the beaten egg to give a shiny, golden finish.
  8. Bake the bites in the preheated oven for 12-15 minutes until they are puffed up and golden brown.
  9. Remove from the oven and transfer to a cooling rack. Sprinkle with sea salt flakes and chopped thyme, if using.
  10. Serve these warm or at room temperature, drizzled with a little more honey if desired.

Notes

For an extra touch, you can add a few fresh thyme leaves before baking or sprinkle with crushed pistachios for added crunch.
