- Chop the fresh herbs finely and place them in a mixing bowl. Add crushed garlic, lemon zest, salt, and pepper, then stir to combine, creating a fragrant herb mixture.
- Incorporate the panko breadcrumbs into the herb mixture, then drizzle with olive oil and mix until the crumbs are evenly coated and slightly sticky.
- Pat the salmon fillets dry with paper towels to remove excess moisture. Spoon the herb crust mixture onto each fillet, pressing firmly to ensure it adheres well.
- Preheat the air fryer to 400°F (200°C). Place the crusted salmon fillets skin-side down into the air fryer basket, ensuring they’re spaced apart for even cooking.
- Cook the salmon for about 10 minutes, or until the crust is golden and crispy, and the fish feels firm but springy when gently pressed.
- Carefully remove the salmon from the air fryer and let rest for a minute. Serve hot, garnished with extra lemon wedges if desired, and enjoy the crispy herb crust contrasting with tender, flaky salmon.
