  • 1 lb pound large shrimp, peeled and deveined preferably raw and fresh
  • 3 cloves garlic, minced fresh garlic for best flavor
  • 3 tbsp honey preferably raw and thick
  • 2 tbsp soy sauce use low-sodium if preferred
  • 1 tbsp lemon juice freshly squeezed
  • 2 tbsp butter unsalted, preferably European-style
  • a pinch chili flakes optional, for heat

Method
 

  1. Begin by patting your shrimp dry with paper towels, then set aside. Mince the garlic finely, so it releases its aroma quickly when cooking.
  2. Heat your large skillet over medium-high heat until shimmering, then add a splash of oil. Once hot, lay the shrimp in a single layer and cook for about 2-3 minutes on each side, until they turn pink and develop a slight caramelization. Remove the shrimp and set aside.
  3. Lower the heat to medium, then add butter to the same skillet. Once melted, stir in the minced garlic and cook for about 30 seconds until fragrant, stirring constantly to prevent burning.
  4. Add honey, soy sauce, and lemon juice to the skillet. Stir vigorously to combine, allowing the mixture to bubble gently and thicken slightly, which should take about 1 minute. You'll notice the sauce becoming glossy and fragrant.
  5. Return the cooked shrimp to the skillet, gently tossing to coat each piece in the sticky honey garlic glaze. Cook for another 1-2 minutes until the sauce is thick and clings shiny to the shrimp. Sprinkle chili flakes if you like a bit of heat.
  6. Check that the shrimp are opaque and firm, with a beautiful glossy coating. Squeeze a little extra lemon juice over the top for brightness. Serve immediately, perhaps over rice or steamed vegetables for a complete meal.
