Ingredients

  • 2 ripe avocados halved and pitted
  • 1/4 cup coconut milk or almond milk for a neutral flavor
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp honey or agave adjust to taste
  • optional toasted coconut flakes or cocoa powder for topping

Equipment

  • Blender
  • Sharp Knife
  • Measuring spoons
  • Ramekins or small bowls
  • Spatula

Method

  1. Use a sharp knife to halve the avocados and carefully remove the pits with a spoon.
  2. Scoop the avocado flesh into a blender, then add a splash of coconut milk and a squeeze of lime juice.
  3. Blend the mixture until it turns silky and smooth, about 30 seconds, scraping down the sides as needed.
  4. Taste the pudding and add honey or agave to sweeten, blending briefly to incorporate.
  5. Pour the creamy pudding into ramekins or small bowls, smoothing the tops with a spatula.
  6. Refrigerate the pudding for at least 2 hours to let it set and flavors meld.
  7. Just before serving, sprinkle with toasted coconut flakes or dust with cocoa powder for added texture and flavor.

Notes

Ensure avocados are ripe for maximum creaminess. Chill the pudding well to achieve the best set. Adjust sweetness based on your preference. Lime juice not only brightens the flavor but also helps keep the vibrant green color.
