  • 1 whole lemon for squeezing

Method
 

  1. Start by chopping the celery and slicing the carrots into thin rounds; set aside.
  2. Heat the large pot over medium heat and add olive oil, letting it warm until shimmering and fragrant.
  3. Add the chopped onions (if using) or simply toss in the chopped celery and sliced carrots; sauté for about 5 minutes until the vegetables soften slightly and the kitchen fills with a gentle aroma.
  4. Place the chicken breasts into the pot and sear them for about 6 minutes per side, until golden and slightly browned, creating a rich base for the soup.
  5. Pour in the chicken broth, bringing the mixture to a gentle simmer. Cover the pot and cook for approximately 15 minutes until the chicken is cooked through and tender.
  6. Remove the chicken breasts, shred them with two forks, and then return the shredded meat to the soup.
