Ingredients
  

  • 1 bunch radishes trimmed and washed
  • 3 cloves garlic minced
  • 1 tsp chopped thyme
  • 2 tbsp olive oil plus extra for drizzling
  • to taste salt
  • to taste pepper
  • 1 lemon lemon for juice
  • 2 Tbsp fresh parsley chopped, for garnish
  • a pinch flaky sea salt for finishing

Method
 

  1. Preheat your oven to 220°C (430°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss the washed radishes with 2 tablespoons of olive oil, minced garlic, chopped thyme, salt, and pepper until evenly coated.
  3. Spread the radishes in a single layer on the prepared baking sheet, ensuring they aren’t crowded for even roasting.
  4. Place the baking sheet in the oven and roast for 20-25 minutes, tossing once halfway through, until the radishes are tender, caramelized around the edges, and fragrant with garlic and herbs.
  5. Once done, remove the radishes from the oven and transfer to a serving dish. Squeeze fresh lemon juice over the top for brightness.
  6. Sprinkle chopped parsley and flaky sea salt over the radishes for added flavor and texture.
  7. Serve warm, allowing the tender, caramelized radishes to shine with fragrant herbs and a bright lemon finish.

Notes

For a milder flavor, blanch the radishes in boiling water for 30 seconds before roasting. Feel free to swap herbs or add a pinch of smoked paprika for extra depth. Radishes can be stored in the fridge for up to 2 days and reheated gently to enjoy leftovers.
