  • 1 cup cheddar cheese grated
  • 1/2 cup caramelized onions prepared
  • 1/2 cup spicy chorizo cooked and crumbled
  • 1 egg egg beaten for egg wash
  • 1 tablespoon fresh thyme chopped
  • 1/2 teaspoon smoked paprika optional

Method

  4. In a bowl, mix caramelized onions with crumbled chorizo and grated cheese, stirring until well combined.
  5. Spoon a small amount of the filling onto the center of each pastry piece, ensuring not to overfill.
  6. Fold each pastry shape over the filling and press the edges together, crimping with a fork for a decorative seal.
  7. Place the filled and sealed pastries onto the prepared baking sheet, leaving space between each.
  8. Brush the tops of each pastry with the beaten egg to give a shiny, golden finish.
  9. Bake in the preheated oven for 15-20 minutes, or until the pastries are puffed, golden, and crispy.
