- Measure out the rolled oats into a mixing bowl and add the pumpkin puree, stirring until well combined. The mixture will be thick and slightly sticky to the touch.
- Pour in the milk and whisk thoroughly to create a smooth, evenly moist texture, similar to thick porridge.
- Sprinkle in the cinnamon and nutmeg, then add honey or maple syrup to sweeten, stirring again until all the spices and sweetener are evenly distributed.
- If using vanilla, stir in the vanilla bean or extract now for an extra layer of aroma.
- Transfer the mixture into an airtight jar or container, smoothing out the top with the back of a spoon.
- Seal the container tightly and refrigerate overnight or for at least 4 hours, allowing the oats to soak up the flavors and soften completely.
- In the morning, give the oats a good stir—you’ll notice a thick, creamy consistency with a comforting pumpkin-spiced aroma. Add your favorite toppings like nuts, seeds, or additional fruit if desired, and serve cold or warmed.
Notes
For a thicker consistency, add a teaspoon of chia seeds before refrigerating. Feel free to customize sweetness and spices to taste. Using airtight jars makes cleanup easy and keeps the oats fresh.
