  • 4 pieces flour tortillas large size
  • 150 grams spicy sausage casings removed, crumbled
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 teaspoon paprika for flavor and color
  • 2 cloves garlic minced
  • 1 tablespoon oil vegetable or olive oil for frying

Method
 

  1. Warm the oil in a skillet over medium heat, then add the minced garlic and paprika. Cook until fragrant, about 30 seconds, then add the crumbled sausage. Cook, stirring occasionally, until browned and cooked through, about 5-6 minutes. Remove from heat and set aside.

  2. Lay a tortilla flat on a clean cutting board. Spread a spoonful of the cooked sausage evenly over the center of the tortilla. Sprinkle a generous layer of shredded cheese on top of the sausage.

  3. Roll the tortilla tightly from one edge to the other, creating a compact cylinder. Repeat with the remaining tortillas and fillings.
  4. Heat a clean skillet over medium heat. Place the rolled tortillas seam side down and cook for about 2-3 minutes until the bottom is golden brown. Carefully turn and cook the other side for another 2-3 minutes until golden and the cheese begins to melt.
  5. Remove the cooked tortilla roll-ups from the skillet and let rest for 1 minute. Slice into 1-inch pieces with a sharp knife, revealing the melted cheese and spicy sausage inside.
  6. Serve hot, optionally garnished with additional paprika or fresh herbs if desired.
