  • 8 oz mushrooms cremini or shiitake, sliced
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce adjust to taste
  • 1 tablespoon oil high-smoke-point, like grapeseed or peanut oil
  • 1 teaspoon sesame oil for finishing
  • 1 teaspoon lemon zest or juice brightens the dish

Method
 

  1. Preheat your wok or skillet over high heat until shimmering, and add the oil.
  2. Add the sliced mushrooms to the hot pan, spreading them out in a single layer. Let them cook undisturbed for about 2 minutes, until they start to turn golden and crispy at the edges.
  3. Stir or toss the mushrooms to promote even browning, and cook for another 2-3 minutes until they are deeply golden and fragrant.
  4. Push the mushrooms to one side of the pan. Add the trimmed asparagus pieces and stir-fry for about 2-3 minutes, shaking the pan or tossing, until the asparagus is bright green and just tender but still crisp.
  5. Add the minced garlic to the pan, stirring constantly for about 30 seconds until fragrant, but not browned or bitter.
  6. Pour in the soy sauce and toss everything together swiftly, cooking for another minute to coat the vegetables evenly and deepen the flavor.
  7. Remove the pan from heat, then drizzle with sesame oil and sprinkle with lemon zest or squeeze a little lemon juice over the stir fry for brightness.
  8. Transfer the stir fry to a plate and serve immediately while hot, enjoying the crispy edges of the mushrooms and the vibrant, tender asparagus with fragrant, smoky notes.
