  • 1 cup chopped mixed vegetables bell peppers, cherry tomatoes, spinach
  • 0.5 cup bread crumbs for binding
  • 2 tbsp olive oil for mixing
  • 1 tsp dried oregano

Method
 

  1. Chop the vegetables into small, uniform pieces and measure out the grated cheese and bread crumbs. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the chopped vegetables, grated cheese, bread crumbs, dried oregano, salt, and pepper. Drizzle with olive oil and mix thoroughly until the ingredients are well incorporated and the mixture holds together when pressed.
  3. Using clean hands or a small scoop, shape the mixture into compact, oval or round bite-sized portions and place them evenly spaced on the prepared baking sheet.
  4. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the cheese is bubbly and slightly crusted. Watch for a crispy exterior with a melty, cheesy interior.
  5. Remove from the oven and let cool slightly on the baking sheet. Serve warm, optionally garnished with fresh herbs or dipping sauces.
