Ingredients
  

  • 3 cups sliced apples preferably firm, fragrant apples like Fuji or Honeycrisp
  • 2 pieces pine sprigs fresh pine or pine extract for aroma
  • 4 teaspoons whole cinnamon sticks
  • 2 teaspoons cloves whole cloves for warm spice aroma
  • 1 orange orange slices thinly sliced, including peel if possible
  • 4 cups water or apple cider for a sweeter scent
  • 1 handful fresh herbs rosemary, thyme, or sage

Method
 

  1. Begin by slicing the apples into thin, even wedges and set aside.
  2. Add water or apple cider to your pot and place it over medium heat.
  3. Once the water starts to warm, add in the cinnamon sticks and cloves to infuse the liquid with warm spice.
  4. Gently place the apple slices, orange slices, pine sprigs, and herbs into the pot, arranging them evenly in the fragrant liquid.
  5. Turn the heat down to low and let everything simmer gently. The mixture should bubble softly, releasing a fresh, piney, and spicy aroma.
  6. Allow the ingredients to simmer for about 30 minutes, stirring occasionally and monitoring to prevent burning or boiling dry.
  7. Check the scent and appearance; the apple slices will be tender and the fragrance will be lively and inviting.
  8. Once ready, turn off the heat and carefully ladle the fragrant liquid and ingredients into your serving vessel or keep warm during your gathering.

Notes

Keep an eye on the simmer and adjust the heat as needed to prevent scorching. Refill with water to maintain level if needed. For a stronger scent, let it simmer longer or add more herbs and spices.
