Watermelon Popsicles Recipe

Rediscovering Sundays

Making watermelon pops isn’t just about beating the summer heat. It’s waking up on a Sunday afternoon when the house smells like ripe melon and that faint hint of mint from last night’s mojito. It’s peeling the watermelon, that satisfying squish under your fingers, and noticing how the juice runs down your chin before you even get to the popsicle stage. The weird part? This simple thing, carving out a chunk of watermelon, taking that first bite after it’s frozen—reminds me of childhood, those lazy weekends that somehow feel more real than anything else. No fuss, no fancy ingredients—just watermelon, a little squeeze of lime, maybe some fresh mint—and a freezer. Seems like we chase complicated all the time, but truth is, sometimes the best stuff is straightforward, messy, and a little unpolished.

Watermelon Popsicles

Watermelon popsicles are frozen treats made by blending ripe watermelon with lime juice and mint, then poured into molds and frozen until solid. They have a vibrant, juicy appearance with a firm yet icy texture, offering a refreshing summer dessert.

Ingredients

  • 4 cups ripe watermelon, cubed seedless preferred
  • 1 lime lime, juiced freshly squeezed
  • 10 fresh mint leaves mint leaves plus extra for garnish, if desired

Equipment

  • Blender
  • Popsicle molds

Method

  1. Place the watermelon cubes in the blender pitcher.
  2. Add the lime juice and mint leaves to the blender.
  3. Blend on high speed until the mixture is smooth and uniform, about 30 seconds. The liquid should be vibrant pink and free of chunks.
  4. Pour the blended mixture evenly into popsicle molds, leaving about 0.5 inch space at the top. Insert popsicle sticks if not built-in.
  5. Place the molds in the freezer and freeze for at least 4 hours, or until completely solid.
  6. Once frozen, run the molds under warm water for a few seconds to loosen, then carefully remove the popsicles. Garnish with mint leaves if desired and serve immediately.

It’s funny how a small thing like this can take you back. Not to a place, exactly—more like a feeling tucked away. Cold watermelon on a sticky afternoon. Maybe that’s all I really want—something honest, cooling, and a little nostalgic, tossed into a simple popsicle mold. Like catching a piece of summer before it slips away, again and again.
